Ingredients

  • ½ lb ground sirloin
  • 1 red or yellow bell pepper, sliced
  • ⅓ cup sliced onion
  • 2 tsp olive oil
  • 1 chipotle pepper in adobo sauce, chopped
  • ¼ tsp salt
  • ⅛ tsp black pepper
  • ½ avocado, sliced
  • ¼ cup chopped fresh cilantro

Instructions

  1. Cook beef, bell pepper, and onion in hot oil in a large skillet over medium-high heat 8 to 10 minutes or beef is done and vegetables are tender.
  2. Stir in chipotle pepper, salt, and black pepper; cook 2 minutes or until mixture is thoroughly heated. Serve beef mixture over Creamy Chipotle Rice recipe. Top with avocado and cilantro.

  • 1 (3.5-oz) pouch boil in bag brown rice
  • ¼ cup sour cream
  • 1 chipotle pepper in adobo sauce, chopped
  • 1 Tbsp lime juice

Side Dish Instructions

  1. Cook rice according to package directions.
  2. Transfer rice to a bowl. Stir sour cream, chipotle pepper, and lime juice into hot cooked rice.
