Ingredients
- ½ lb ground sirloin
- 1 red or yellow bell pepper, sliced
- ⅓ cup sliced onion
- 2 tsp olive oil
- 1 chipotle pepper in adobo sauce, chopped
- ¼ tsp salt
- ⅛ tsp black pepper
- ½ avocado, sliced
- ¼ cup chopped fresh cilantro
Instructions
- Cook beef, bell pepper, and onion in hot oil in a large skillet over medium-high heat 8 to 10 minutes or beef is done and vegetables are tender.
- Stir in chipotle pepper, salt, and black pepper; cook 2 minutes or until mixture is thoroughly heated. Serve beef mixture over Creamy Chipotle Rice recipe. Top with avocado and cilantro.
Side Dish Ingredients
- 1 (3.5-oz) pouch boil in bag brown rice
- ¼ cup sour cream
- 1 chipotle pepper in adobo sauce, chopped
- 1 Tbsp lime juice
Side Dish Instructions
- Cook rice according to package directions.
- Transfer rice to a bowl. Stir sour cream, chipotle pepper, and lime juice into hot cooked rice.
