Ingredients

  • ½ lb small red potatoes, quartered
  • 2 tsp olive oil
  • ½ tsp Old Bay seasoning, divided
  • ⅛ tsp pepper
  • ½ lb peeled and deveined, large raw shrimp
  • 4 oz Cajun style andouille smoked sausage
  • 2 frozen ears corn
  • 2 Tbsp butter, softened
  • 3 Tbsp chopped fresh parsley, optional
  • ¼ cup cocktail sauce, optional

Instructions

  1. Preheat oven to 450°F. Toss together potatoes, oil, ¼ tsp Old Bay seasoning, and pepper on half of a large rimmed baking sheet; spread in a single layer. Roast 10 minutes.
  2. Toss together shrimp, sausage, and ⅛ tsp Old Bay seasoning. Add to other half of rimmed baking sheet. Roast shrimp and potatoes 10 to 15 minutes or until shrimp are done and potatoes are lightly browned and tender.
  3. Meanwhile, microwave corn according to package directions. Spread corn with butter, and sprinkle with ⅛ tsp Old Bay seasoning. Sprinkle with parsley, and serve with cocktail sauce, if desired.
