Picadillo Bell Peppers
Creamy Cucumbers and Pita Rounds

Ingredients
- ½ (8.8-oz) pouch microwavable long grain brown rice
- ¾ lb ground beef
- ¼ onion, chopped
- 2 cloves garlic, minced
- 3 Tbsp raisins
- 3 Tbsp sliced pimiento stuffed olives
- ¾ cup tomato sauce
- ½ Tbsp chili powder
- ½ tsp ground cumin
- ½ cup cottage cheese
- 3 large bell peppers
Instructions
- Preheat oven to 350°F. Heat rice according to package directions.
- Meanwhile, cook beef, onion, and garlic in a nonstick skillet over medium-high heat 5 minutes or until beef is browned and crumbly; Drain.
- Transfer to a bowl; stir in raisins, olives, tomato sauce, chili powder, and cumin. Stir in cottage cheese.
- Cut tops off bell peppers; discard seeds and membranes. Stuff beef mixture into bell peppers. Place stuffed peppers in a baking dish.
- Bake 30 minutes or until peppers are tender.
Side Dish Ingredients
- 1 English cucumber, cut into half moon slices
- ½ cup plain Greek yogurt
- 1 clove garlic, minced
- ¼ tsp salt
- ¼ tsp pepper
- 2 flax, oat bran, and whole wheat pita rounds, torn
Side Dish Instructions
- Combine cucumbers, yogurt, garlic, salt and pepper in a medium bowl; toss.
- Cover and refrigerate until ready to serve with pitas.
