Chorizo and Pan-Roasted Tomato Spaghetti

Ingredients

  • 12 oz spaghetti
  • 1 lb ground chorizo sausage
  • 2 Tbsp minced garlic
  • 2 pints grape tomatoes
  • ¼ tsp crushed red pepper
  • ½ cup white wine
  • ¼ cup chopped fresh basil
  • ½ cup grated Parmesan cheese

Instructions

  1. Cook pasta according to package directions.
  2. Meanwhile, cook chorizo in a large nonstick skillet over medium-high heat 5 to 6 minutes or until browned and crumbly.
  3. Add garlic to skillet; cook 30 seconds or until fragrant. Add tomatoes and red pepper; cook 2 to 3 minutes or until tomatoes are about to burst. Add wine; cook 2 to 3 minutes or until slightly thickened. Stir in basil.
  4. Combine pasta and chorizo mixture; sprinkle with cheese.

  • 1 (5-oz) pkg spinach
  • 1 (5-oz) pkg arugula
  • ½ cup olive oil vinaigrette

Side Dish Instructions

  1. Toss together all ingredients in a large bowl.
