Chorizo and Pan-Roasted Tomato Spaghetti

Ingredients
- 12 oz spaghetti
- 1 lb ground chorizo sausage
- 2 Tbsp minced garlic
- 2 pints grape tomatoes
- ¼ tsp crushed red pepper
- ½ cup white wine
- ¼ cup chopped fresh basil
- ½ cup grated Parmesan cheese
Instructions
- Cook pasta according to package directions.
- Meanwhile, cook chorizo in a large nonstick skillet over medium-high heat 5 to 6 minutes or until browned and crumbly.
- Add garlic to skillet; cook 30 seconds or until fragrant. Add tomatoes and red pepper; cook 2 to 3 minutes or until tomatoes are about to burst. Add wine; cook 2 to 3 minutes or until slightly thickened. Stir in basil.
- Combine pasta and chorizo mixture; sprinkle with cheese.

- 1 (5-oz) pkg spinach
- 1 (5-oz) pkg arugula
- ½ cup olive oil vinaigrette

- Toss together all ingredients in a large bowl.
