Caramelized Onion Chicken

Ingredients

  • 2 large onions, thinly sliced
  • ¼ cup olive oil, divided
  • 1½ lb boneless, skinless chicken thighs
  • ½ tsp salt
  • 3 cloves garlic, minced
  • 6 Tbsp lemon juice
  • 3 Tbsp Dijon mustard
  • 1½ tsp paprika
  • ¾ tsp cayenne pepper
  • 1½ cups less sodium chicken broth

Instructions

  1. Cook onions, covered, in 3 Tbsp hot oil in a large Dutch oven over medium heat 15 minutes or until tender, stirring occasionally. Uncover, and increase heat to medium-high. Cook, stirring constantly, until onions are golden brown.
  2. Meanwhile, sprinkle chicken with salt. Cook chicken in 1 Tbsp hot oil in a large skillet over medium-high heat 4 minutes per side or until browned. Remove from skillet.
  3. Add chicken, garlic, lemon juice, mustard, paprika, and cayenne to onions in Dutch oven, stirring to coat. Add broth, reduce heat to medium, and cook 10 to 15 minutes or until chicken is done.

  • ½ (10-oz) pkg spinach

  1. Heat potatoes according to package directions. Stir in spinach until wilted.
