Lemon-Pepper Chicken Thighs
Rosemary-Sweet Potato Couscous
Ingredients
- ¾ lb boneless, skinless chicken thighs
- ½ tsp salt free lemon pepper seasoning
- ⅛ tsp salt
- 1 Tbsp butter
Instructions
- Sprinkle chicken with lemon-pepper seasoning and salt. Melt butter in a skillet over medium-high heat. Cook chicken 4 to 5 minutes per side or until done.

- ½ cups pearled Israeli couscous
- ¾ cup less sodium chicken broth
- 1 cup sweet potato cubes
- 1 Tbsp olive oil
- ½ tsp dried crushed rosemary
- ⅛ tsp salt
Side Dish Instructions
- Cook couscous in broth according to package directions.
- Meanwhile, cook potatoes in hot oil in a skillet over medium-high heat 8 minutes or until browned and tender. Stir in couscous, rosemary, and salt.
