Lemon-Pepper Chicken Thighs

Ingredients

  • ¾ lb boneless, skinless chicken thighs
  • ½ tsp salt free lemon pepper seasoning
  • ⅛ tsp salt
  • 1 Tbsp butter

Instructions

  1. Sprinkle chicken with lemon-pepper seasoning and salt. Melt butter in a skillet over medium-high heat. Cook chicken 4 to 5 minutes per side or until done.

Side Dish Ingredients

  • ½ cups pearled Israeli couscous
  • ¾ cup less sodium chicken broth
  • 1 cup sweet potato cubes
  • 1 Tbsp olive oil
  • ½ tsp dried crushed rosemary
  • ⅛ tsp salt

Side Dish Instructions

  1. Cook couscous in broth according to package directions.
  2. Meanwhile, cook potatoes in hot oil in a skillet over medium-high heat 8 minutes or until browned and tender. Stir in couscous, rosemary, and salt.
