Crispy Parmesan-Ranch Chicken

Ingredients

  • 1 lb boneless, skinless chicken breasts, halved crosswise
  • ⅔ cup panko breadcrumbs
  • ¼ cup freshly grated Parmesan cheese
  • ½ (1-oz) envelope Ranch dressing mix
  • 2 Tbsp olive oil, divided

Instructions

  1. Pound chicken to an even thickness between plastic wrap using a meat mallet.
  2. Combine breadcrumbs, cheese, and Ranch mix in a shallow bowl. Brush chicken with 1 Tbsp oil; dredge in breadcrumb mixture, pressing gently to adhere.
  3. Cook chicken in 1 Tbsp hot oil in a large nonstick skillet over medium-high heat 5 to 6 minutes per side or until done.

  • ½ (10.5-oz) can cream of chicken soup
  • ¾ cup less sodium chicken broth
  • ¾ cup instant brown rice
  • 1 (12-oz) pkg broccoli florets

Side Dish Instructions

  1. Bring soup and broth to a boil in a saucepan. Add rice; remove from heat, cover, and let stand 5 to 8 minutes or until liquid is absorbed.
  2. Meanwhile, cook broccoli according to package directions.
