Chicken and Vegetables
Mashed PotatoesIngredients
- 1½ lb bone in chicken thighs
- ¼ tsp pepper
- ⅛ tsp salt
- 1 (8-oz) pkg cremini mushrooms, quartered
- 1 red bell pepper, thinly sliced
- ½ onion, thinly sliced
- 1 (14.5-oz) can whole tomatoes, drained and chopped
- ¼ cup pitted Castelvetrano olives
- ½ tsp dried crushed rosemary
- 2 small cloves garlic, finely chopped
- 1 bay leaf
- 2 Tbsp chopped fresh parsley
Instructions
- Sprinkle chicken with pepper and salt. Place in a lightly greased 3- to 4-quart slow cooker.
- Top with mushrooms, bell peppers, onion, tomatoes, olives, rosemary, garlic, and bay leaf.
- Cover and cook on LOW 8 hours. Remove bay leaf; discard. Sprinkle with parsley.

- Cook potatoes according to package directions.
