Ingredients

  • 1½ lb bone in chicken thighs
  • ¼ tsp pepper
  • ⅛ tsp salt
  • 1 (8-oz) pkg cremini mushrooms, quartered
  • 1 red bell pepper, thinly sliced 
  • ½ onion, thinly sliced
  • 1 (14.5-oz) can whole tomatoes, drained and chopped
  • ¼ cup pitted Castelvetrano olives
  • ½ tsp dried crushed rosemary
  • 2 small cloves garlic, finely chopped 
  • 1 bay leaf
  • 2 Tbsp chopped fresh parsley

Instructions

  1. Sprinkle chicken with pepper and salt. Place in a lightly greased 3- to 4-quart slow cooker.
  2. Top with mushrooms, bell peppers, onion, tomatoes, olives, rosemary, garlic, and bay leaf.
  3. Cover and cook on LOW 8 hours. Remove bay leaf; discard. Sprinkle with parsley.

  • ½ (32-oz) pkg refrigerated mashed potatoes

  1. Cook potatoes according to package directions.
