Balsamic-Strawberry Pork Tenderloin
Long-Grain and Wild Rice and Roasted Asparagus

Ingredients
- 1 (1-lb) pork tenderloin, trimmed
- ½ Tbsp Montreal steak seasoning
- 3 slices bacon
- ½ cup sliced strawberries
- ¼ cup balsamic vinegar
Instructions
- Preheat oven to 400°F. Sprinkle pork with seasoning; wrap tenderloin in bacon.
- Heat an ovenproof skillet over medium-high heat; add pork, and cook 4 to 5 minutes per side or until bacon is browned.
- Transfer skillet to oven, and bake 10 minutes or until a thermometer inserted in thickest portion of pork registers 145°F.
- Meanwhile, bring strawberries and vinegar to a boil in a saucepan; boil 5 minutes or until vinegar is thickened. Serve over pork.

- ½ lb asparagus, trimmed
- ½ Tbsp olive oil
- 1 (8.8-oz) pouch microwavable long grain and wild rice
Side Dish Instructions
- Preheat oven to 400°F. Toss together asparagus and oil on a rimmed baking sheet; spread in a single layer. Season with salt and pepper, if desired. Bake 15 minutes or until asparagus is browned and tender.
- Heat rice according to package directions.
