Balsamic-Strawberry Pork Tenderloin

Ingredients

  • 1 (1-lb) pork tenderloin, trimmed 
  • ½ Tbsp Montreal steak seasoning
  • 3 slices bacon
  • ½ cup sliced strawberries
  • ¼ cup balsamic vinegar

Instructions

  1. Preheat oven to 400°F. Sprinkle pork with seasoning; wrap tenderloin in bacon.
  2. Heat an ovenproof skillet over medium-high heat; add pork, and cook 4 to 5 minutes per side or until bacon is browned.
  3. Transfer skillet to oven, and bake 10 minutes or until a thermometer inserted in thickest portion of pork registers 145°F.
  4. Meanwhile, bring strawberries and vinegar to a boil in a saucepan; boil 5 minutes or until vinegar is thickened. Serve over pork.

  • ½ lb asparagus, trimmed
  • ½ Tbsp olive oil
  • 1 (8.8-oz) pouch microwavable long grain and wild rice

Side Dish Instructions

  1. Preheat oven to 400°F. Toss together asparagus and oil on a rimmed baking sheet; spread in a single layer. Season with salt and pepper, if desired. Bake 15 minutes or until asparagus is browned and tender.
  2. Heat rice according to package directions.
