Chicken Casserole with Potato Crust

Ingredients

  • 1 (24-oz) pkg refrigerated mashed potatoes
  • 1 (8-oz) pkg shredded Cheddar cheese, divided
  • ½ cup panko breadcrumbs
  • 1 egg yolk
  • 4 Tbsp butter, melted and divided
  • 1½ lb boneless, skinless chicken breasts, cubed
  • 1 (10.5-oz) can cream of chicken soup
  • ¼ cup sour cream
  • ¼ cup milk
  • 1 (12-oz) pkg frozen mixed vegetables, thawed
  • 1 tsp onion powder
  • 1 tsp garlic powder

Instructions

  1. Preheat oven to 400°F. Stir together potatoes, 1 cup cheese, breadcrumbs, and egg yolk in a bowl until blended.
  2. Spread potato mixture in bottom and up sides of a lighty greased deep-dish 9-inch pie plate. Brush potatoes with 2 Tbsp melted butter and bake 25 minutes or until edges are lightly browned.
  3. Meanwhile, cook chicken in remaining 2 Tbsp melted butter in a large skillet over medium heat until done. Stir in soup, sour cream, milk, vegetables, onion powder, and garlic powder. Pour over mashed potato crust.
  4. Bake 20 minutes. Sprinkle with remaining cheese, and bake 10 minutes longer.

Side Dish Ingredients

  • 3 red apples
  • 1 lb seedless red grapes

Side Dish Instructions

  1. Slice apples just before serving. Serve apples and grapes on each plate.
