Bacon and Corn Chowder with Shrimp
Easy Cheese ToastIngredients
- 6 slices bacon, chopped
- 1 (10-oz) pkg frozen seasoning blend
- 6 cups chicken broth
- 1 (32-oz) carton refrigerated sour cream and chives mashed potatoes
- 1 (12-oz) pkg frozen whole kernel corn
- ½ cup heavy cream
- 1 lb peeled and deveined, small raw shrimp
Instructions
- Cook bacon in a large Dutch oven over medium heat until crisp; remove with a slotted spoon and drain on paper towels.
- Add seasoning blend to drippings in pot; cook 2 minutes.
- Stir in broth, potatoes, corn, and cream; bring to a boil, reduce heat and simmer 10 minutes.
- Stir in shrimp; cook 5 minutes or until shrimp are done. Top servings with bacon .
Side Dish Ingredients
- 4 Tbsp butter, softened
- 1 cup shredded Cheddar cheese
- ½ (14-oz) French bread
Side Dish Instructions
- Preheat oven to 425°F. Stir together butter and cheese. Cut bread in half lengthwise; spread butter mixture on cut sides of bread.
- Place on a baking sheet, and bake 10 minutes or until cheese melts and bread is toasted; slice to serve.
