Ingredients

  • ⅓ cup orange juice
  • ⅓ cup less sodium soy sauce
  • 1 Tbsp cornstarch
  • 1 Tbsp natural rice vinegar
  • ¼ tsp black pepper
  • 2 lb flank steak, trimmed
  • 6 Tbsp olive oil, divided 
  • 2 lb bok choy, trimmed and coarsely chopped 
  • 2 (5-oz) pkg sliced shiitake mushrooms 
  • 2 red bell peppers, thinly sliced 
  • 1 jalapeno pepper, seeded and thinly sliced
  • 1 tsp ground ginger
  • 4 green onions, chopped

Instructions

  1. Whisk together juice, soy sauce, cornstarch, vinegar, and black pepper in a small bowl.
  2. Thinly slice steak diagonally across the grain. Sauté steak in 3 Tbsp hot oil in a large nonstick skillet or wok over medium-high heat 5 minutes or until begins to brown. Remove from skillet.
  3. Add 3 Tbsp oil, bok choy, mushrooms, bell peppers, jalapeño, and ginger to skillet; cook 3 minutes.
  4. Add orange juice mixture and beef. Bring to a boil; reduce heat and simmer until sauce is slightly thickened. Sprinkle with onions.
