Garlic-Butter Salmon

Ingredients

  • ¾ lb salmon fillets, patted dry
  • ¼ tsp salt
  • ¼ tsp pepper
  • 2 tsp olive oil
  • 1½ Tbsp butter, softened
  • 1 Tbsp finely chopped fresh parsley
  • 2 cloves garlic, minced

Instructions

  1. Sprinkle fish with salt and pepper. Cook fish in hot oil in a skillet over medium-high heat 3 to 4 minutes per side or until fish flakes with a fork.
  2. Combine butter, parsley, and garlic; spread on fish.

Side Dish Ingredients

  • 1 Yukon gold potato, cut into 1 inch pieces
  • ½ lb Broccolini, cut into 2 inch pieces
  • ¼ cup freshly grated Parmesan cheese
  • 1½ Tbsp olive oil vinaigrette
  • 2 Tbsp chopped fresh parsley
  • ¾ tsp Italian seasoning
  • ¼ tsp pepper

Side Dish Instructions

  1. Place potatoes and 2 Tbsp water in a microwave-safe bowl; cover with plastic wrap, leaving a small vent. Microwave at HIGH 6 minutes.
  2. Add Broccolini to potatoes; cover and microwave at HIGH 2 to 4 minutes or until potatoes are tender when pierced with a fork. Drain.
  3. Gently toss potato mixture with remaining ingredients in a medium bowl.
