Ingredients

  • ½ (12-oz) pkg bacon, chopped
  • 1 lb peeled and deveined, large raw shrimp
  • ½ Tbsp blackened seasoning
  • 1 (5-oz) pkg spring mix
  • 1 Granny Smith apple, chopped
  • ⅓ cup crumbled blue cheese
  • ¼ cup candied pecans
  • 3 Tbsp balsamic vinaigrette

Instructions

  1. Cook bacon in a skillet over medium heat 6 to 8 minutes or until crisp; remove from skillet, reserving 1 Tbsp drippings in skillet.
  2. Sprinkle shrimp with seasoning. Cook shrimp in hot drippings in skillet over medium-high heat 2 to 3 minutes per side or until done.
  3. Meanwhile, toss together spring mix, bacon, apple, cheese, nuts, and dressing in a medium bowl. Serve shrimp over salad.
