Shrimp and Bell Pepper Skillet

Ingredients
- 1 red or yellow bell pepper, chopped
- 1 shallot, chopped
- 1½ Tbsp olive oil
- 1 lb peeled and deveined, large raw shrimp
- ¼ tsp salt
- ¼ tsp pepper
- ½ cup less sodium chicken broth
- ½ cup heavy cream
- 1 tsp smoked paprika
- ½ (5-oz) pkg baby spinach
Instructions
- Cook bell pepper and shallot in hot oil in a skillet over medium-high heat 6 to 8 minutes or until lightly browned and tender. Add shrimp, salt, and pepper. Cook 2 minutes.
- Stir in broth, cream, and paprika; cook 3 minutes. Stir in spinach; cook 2 minutes or until spinach wilts and shrimp are done.
