Pimiento Cheese Chicken

Chive Mashed Potatoes and Green Beans

Ingredients

  • 6 slices center cut bacon, chopped
  • 2¼ lb boneless, skinless chicken breasts
  • ¾ cup pimiento cheese
  • 2 green onions, thinly sliced

Instructions

  1. Preheat broiler. Cook bacon in a large skillet over medium-high heat 6 minutes or until crisp. Drain, reserving 2 Tbsp drippings in skillet.
  2. Pound chicken to an even thickness between plastic wrap using a meat mallet. Cook chicken in drippings over medium-high heat 5 to 6 minutes per side or until done.
  3. Stir bacon into pimiento cheese. Spread pimiento cheese over chicken on a lightly greased broiler pan. Broil 2 minutes or until cheese melts. Sprinkle with onions.

  • 1 (32-oz) carton refrigerated mashed potatoes
  • 3 Tbsp chopped fresh chives
  • 2 (12-oz) pkg green beans
  • ½ tsp garlic powder
  • ½ tsp pepper

Side Dish Instructions

  1. Heat potatoes according to package directions. Stir in chives.
  2. Meanwhile, cook green beans according to package directions. Toss with garlic powder and pepper.
