Ingredients

  • 1½ Tbsp olive oil, divided
  • 1 tsp Creole seasoning
  • ½ tsp hot sauce
  • 1½ lb bone in, skin on chicken thighs

Instructions

  1. Preheat grill or grill pan to medium heat. Combine 1 Tbsp oil, Creole seasoning, and hot sauce in a large bowl. Add chicken, and toss. Season with salt and pepper, if desired.
  2. Place chicken on a grill rack rubbed with ½ Tbsp oil. Grill, covered, 6 to 7 minutes per side or until chicken is done.

Side Dish Ingredients

  • ½ (5-oz) pkg baby arugula
  • 1 cup grape tomatoes, halved
  • 2½ Tbsp crumbled blue cheese
  • 1 clove garlic, minced
  • 1 Tbsp balsamic vinegar
  • 1½ Tbsp olive oil
  • ⅛ tsp salt
  • ⅛ tsp pepper

Side Dish Instructions

  1. Combine arugula, tomatoes, and cheese in a bowl.
  2. Whisk together garlic, vinegar, oil, salt, and pepper; pour over arugula, and toss.
