Ingredients

  • 1 lb ground beef
  • ½ small onion, chopped
  • ½ green bell pepper, chopped
  • 1 tsp minced garlic
  • ½ Tbsp olive oil
  • ½ Tbsp ground cumin
  • ¼ tsp salt
  • ¼ cup refrigerated salsa
  • ¾ cup shredded sharp Cheddar cheese
  • 1½ cup shredded iceberg lettuce
  • 1 Roma tomato, chopped
  • ¼ cup sour cream
  • 2 Tbsp chopped fresh cilantro

Instructions

  1. Preheat broiler. Cook beef, onion, bell pepper, and garlic in hot oil in a large skillet over medium heat until beef is browned and crumbly and vegetables are tender.
  2. Stir in cumin, salt, and salsa. Cook 2 minutes or until thoroughly heated.
  3. Spoon mixture into a 2-quart broiler-proof baking dish. Sprinkle with cheese. Broil 3 to 4 minutes or until cheese melts.
  4. Top with lettuce, tomatoes, sour cream, and cilantro just before serving.
