Chipotle-Honey Salmon Bowls

Ingredients
- 2¼ lb salmon fillets
- ½ cup fresh lime juice
- 2 Tbsp olive oil
- 1½ Tbsp honey
- ¼ cup chopped fresh cilantro
- 2 cloves garlic, minced
- 1 tsp ground chipotle chile pepper
- ¼ tsp ground cumin
- ¼ tsp crushed red pepper
- ½ tsp salt
- ½ tsp black pepper
- 2 avocados, diced
- 2 tomatoes, diced
- ½ cup crumbled feta cheese
Instructions
- Preheat oven to 425°F. Place fish on a foil-lined rimmed baking sheet.
- Whisk together lime juice, oil, honey, cilantro, garlic, chipotle pepper, cumin, red pepper, salt, and black pepper. Brush half of lime juice mixture over fish.
- Bake 15 to 20 minutes or until fish flakes with a fork.
- Meanwhile, combine avocados, tomatoes, and cheese in a bowl; toss with remaining lime mixture. Serve salmon with avocado mixture over Cilantro-Lime Rice recipe.

- 1½ cups long grain brown rice
- 3 cups chicken bone broth
- ¼ cup chopped fresh cilantro
- 1 Tbsp lime zest
- ¼ tsp kosher salt
Side Dish Instructions
- Cook rice according to package directions substituting broth for water. Stir in cilantro, lime zest, and salt.
