Ingredients

  • 2 lb lean ground beef
  • 3 cloves garlic, minced
  • 1 Tbsp Southwest seasoning
  • ½ tsp pepper
  • 2 Tbsp fresh lime juice
  • ½ tsp garlic salt
  • 2 Tbsp olive oil
  • ¼ cup chopped fresh cilantro
  • 2 romaine lettuce hearts, shredded
  • 2 avocados, diced
  • 2 tomatoes, chopped
  • 1 jicama, peeled and shredded
  • 1 cup refrigerated salsa

Instructions

  1. Cook beef, garlic, seasoning, and pepper in a large skillet over medium heat until beef is browned and crumbly. Drain, if needed.
  2. Whisk together lime juice and garlic salt in a small bowl until blended. Gradually whisk in olive oil, blending well; stir in cilantro.
  3. Divide lettuce, avocado, tomatoes, and jicama among 6 plates; top each with beef mixture, and drizzle with dressing. Serve with salsa, if desired.

  • 3 (1.1-oz) bags taco flavored tortilla style protein chips
