Chili and Spice-Rubbed Pork Tenderloin

Ingredients
- 2 (1-lb) pork tenderloins, trimmed
- 2 Tbsp Southwest seasoning
- 2 Tbsp olive oil
- 2 Tbsp honey
- 1 Tbsp lime juice
Instructions
- Preheat oven to 400°F. Rub pork with seasoning.
- Cook pork in hot oil in a large ovenproof skillet over medium-high heat 4 minutes per side or until browned. Transfer skillet to oven.
- Bake 10 minutes or until a meat thermometer inserted reads 145°F. Let stand 3 minutes before slicing.
- Stir together honey and lime juice; drizzle over pork.

- 4 large sweet potatoes
- 4 Tbsp butter
- 1 tsp salt, divided
- 1 tsp pepper, divided
- 2 (12-oz) pkg trimmed green beans
Side Dish Instructions
- Preheat oven to 425°F. Bake potatoes on a foil-lined rimmed baking sheet 45 minutes or until tender.
- Peel potatoes, and mash in a bowl. Stir in butter and ½ tsp each salt and pepper.
- Meanwhile, steam green beans according to package directions; sprinkle with ½ tsp each salt and pepper.
