Chili and Spice-Rubbed Pork Tenderloin

Ingredients

  • 2 (1-lb) pork tenderloins, trimmed
  • 2 Tbsp Southwest seasoning
  • 2 Tbsp olive oil
  • 2 Tbsp honey
  • 1 Tbsp lime juice

Instructions

  1. Preheat oven to 400°F. Rub pork with seasoning.
  2. Cook pork in hot oil in a large ovenproof skillet over medium-high heat 4 minutes per side or until browned. Transfer skillet to oven.
  3. Bake 10 minutes or until a meat thermometer inserted reads 145°F. Let stand 3 minutes before slicing.
  4. Stir together honey and lime juice; drizzle over pork.

Side Dish Ingredients

  • 4 large sweet potatoes
  • 4 Tbsp butter
  • 1 tsp salt, divided
  • 1 tsp pepper, divided
  • 2 (12-oz) pkg trimmed green beans

Side Dish Instructions

  1. Preheat oven to 425°F. Bake potatoes on a foil-lined rimmed baking sheet 45 minutes or until tender.
  2. Peel potatoes, and mash in a bowl. Stir in butter and ½ tsp each salt and pepper.
  3. Meanwhile, steam green beans according to package directions; sprinkle with ½ tsp each salt and pepper.
